This is classic, Organic & Fairtrade (FLO) certified, Ethiopian Arabica coffee from Sidamo, one of the country's most prestigious coffee regions. The coffee is grown at an altitude of 1,500–2,200 meters above sea level, where the coffee berries and flavor mature slowly, giving the coffee a bright acidity and an elegant, clean flavor profile.
It has distinct notes of Darjeeling tea, lemon and peach .
The coffee is produced by the Boa Bedegelo Basic Cooperative in Dale District belong smallholder farmers, whose cooperative, founded in 1975, has about 2,800 members. It is part of the Sidama Coffee Farmers Cooperative Union (SCFCU) .
Ripe berries are hand-picked and hulled within 12 hours of harvest and fermented in tanks for up to 48 hours, depending on the temperature. After fermentation, the coffee is washed with clean water and dried for 10–15 days before further processing.
